This department is responsible for preparing all the baked good the
cafeterias and express units receive daily. Cinnamon rolls, kolaches, and
cookies are all prepared here. They also prepare the cakes and specialty items
for our catering department. The machine they use is called a Moline. This
machine helps preparation go a lot quicker. The dough is placed in a huge funnel
at the end of the machine. The machine kneads, rolls and cuts the dough
according to what product is being produced. The dinner rolls are also prepared
in this department. We make so many dinner rolls that roll production is done in
the evening by a different crew. The night crew prepares about 40,000 rolls each
evening for service the next day.
